Culinary Skills Level

2 Diploma

This Culinary Skills qualification will develop you to become a chef and could progress you to a more senior chef's role. You'll gain a high standard of cookery skills and patisserie skills, you will also learn other workplace essentials in food safety and working with others. The culinary Skills qualification is for anyone who works or wants to work as a chef in the catering and hospitality sector. It is ideal for both 16-18 year olds and 19+ learners who wish to seek a career in the industry.

Students aged 16-18 will form a study programme which will also include the VRQ Level 2 Certificate in Professional Food and Beverage Service qualification (this is available for mature students to study at extra cost).

Depending on GCSE results the study programme could include either functional skills (Maths & English) or GCSE (Maths & English) and any underpinning knowledge required for the qualification.

In this course, students cover the fundamental professional culinary skills required to become a chef in the current, dynamic industry.

L2 Food safety in catering

Prep & cook Stocks. soups & sauces

Prepare and cook fruit and vegetables

Prepare and cook meat and offal

Prepare and cook poultry

Prepare and cook fish and shellfish

Prepare and cook rice, pasta, grains and egg dishes

Prepare hot and cold desserts and puddings

Produce pasta products

Produce biscuit, cake and sponge products

Produce fermented dough products

We have a team of tutors who will work with you to achieve these essential qualifications and enable you to apply these skills in your day to day activities and work.

Since September 2013 any young person who does not achieve their GCSE in English language and mathematics at grade C or above will have to continue their studies at college. Students who have a grade D in either subject must study these subjects at GCSE level.
