Patisserie and Culinary Management, Level 4

Higher National Certificate (HNC)

The qualification in Level 4 Patisserie provides a specialist work related programme of study that covers the key knowledge, understanding and practical skills required in this specialist area of the hospitality industry. The qualification prepares learners for employment in the hospitality industry patisserie sector and will be suitable for learners who have already decided that they wish to enter this area of work. BTEC Level 4 HNC Diplomas provide a nationally recognised qualification offering career progression and professional development for those already in employment and opportunities to progress in higher education.

Edexcel BTEC Level 4 HNC Patisserie and Culinary Management equips the learners with the skills in a hospitality management context, including investigatory and research skills, focusing on management issues and patisserie specialisms within the context of hospitality. This course will provide opportunities for the learners to develop attributes, techniques essential for successful performance in working life within the hospitality industry such as patisserie, food development, retail, food and beverage, hotel and events management.

Teaching methods:

The knowledge and skills acquired on the programme will link directly to the vocational context and will diversify into a range of skills required by the hospitality industry. Teaching and learning methods will include formal lectures, demonstration, practical observation, independent research and product development which will underpin the practical workshop style sessions with relevant gastronomical, historical and cultural reference. Practical modules will take place in a professional kitchen environment with tutor support and guidance and extra independent learning sessions will be timetabled to allow access to the specialist equipment and resources.

The qualification is designed to cover various areas of the industry and the units will be assessed in a practical and theory environment. The course covers topics such as:

  • Help to achieve GCSE English and maths at grades A*-C if you do not already have them
  • Practical activities that help your personal development including study skills, enrichment activities, employability training and classes in personal and social skills to get you ready for further education or employment.
  • Support to enable you to progress to the next level of study or employment

English and Maths skills are vital for employment and to secure a place on courses at a higher level, including university.

We have a team of tutors who will work with you to achieve these essential qualifications and enable you to apply these skills in your day to day activities and work.

Since September 2013 any young person who does not achieve their GCSE in English language and mathematics at grade C or above will have to continue their studies at college. Students who have a grade D in either subject must study these subjects at GCSE level.
