The City of Liverpool College courses are focused on advanced practical and professional skills to ensure you leave the college prepared as a professional chef in one of the world’s fastest growing industries. Students gain practical skills and valuable experience working in our superb training facilities.

There has never been a better time to enter the hospitality and catering industry. The industry is growing year on year and this is particularly true for our region with the expansion of quality restaurants in the city centre and across Merseyside.

This course would be suitable for those wishing to pursue a career as a professional chef. The qualification will allow you to access top grade employment in the hospitality and catering industry. The course will allow the candidate to experience top levels of catering in an appropriate realistic working environment. Related kitchen theory and underpinning knowledge will be incorporated into practical sessions as well as the more traditional lecture. The course will also be enriched with patisserie sessions.

The course is comprised of the following practical units:

* The principles of food safety supervision for catering

* Practical gastronomy

* Advanced skills and techniques in producing vegetable and vegetarian dishes

* Advanced skills and techniques in producing meat dishes

* Advanced skills and techniques in producing poultry and game dishes

* Advanced skills and techniques in producing fish and shellfish

This course is Advanced Learner Loan eligible, which can fully cover the course fee.

At The City of Liverpool College you will undertake a personalised Study Programme, which will help you to achieve your ambitions and career goals.

All of our Study Programmes are designed to help you to develop your skills and widen your college experience.

What you should expect from your Study Programme:

  • A substantial qualification e.g. GCSE, A level or vocational equivalent
  • Meaningful work experience
  • Help to achieve GCSE English and maths at grades A*-C if you do not already have them
  • Practical activities that help your personal development including study skills, enrichment activities, employability training and classes in personal and social skills to get you ready for further education or employment.
  • Support to enable you to progress to the next level of study or employment

English and Maths

English and Maths skills are vital for employment and to secure a place on courses at a higher level, including university.

We have a team of tutors who will work with you to achieve these essential qualifications and enable you to apply these skills in your day to day activities and work.

Since September 2013 any young person who does not achieve their GCSE in English language and mathematics at grade C or above will have to continue their studies at college. Students who have a grade D in either subject must study these subjects at GCSE level.

Wow, what a lovely experience. First night of the new summer menu and they have nailed it. Starters of duck confit rolls where outstanding, monk fish main equally as good and finished off with berry parfait for me but the star of the night was my other halves apple crumble soufflé. Where are going back ASAP just so I can have one it was divine. Well done to all of the staff they are a real credit.
