The Level 2 Certificate in Culinary Skills is aimed at leaners who work or who want to work as professional chefs in the catering and hospitality sector. The course allows learners to learn, develop and practise the skills required for employment and/or career progression in the catering and hospitality sector.

To achieve the Level 2 Award in Culinary Skills, learners must achieve 14 credits from a range of optional units to include amongst others:

Health and safety in catering and hospitality

Food safety in catering

Developing skills for employment in the catering and hospitality industry

Healthier good and special diets

Catering operations, costs and menu planning

Prepare and cook stocks, soups and sauces

Prepare and cook fruit and vegetables

Prepare and cook rice, pasta, grains and eggs dishes

Prepare and cook fish and shellfish

Prepare and cook poultry

Produce paste products

Produce hot and cold desserts and puddings

Produce biscuit, cake and sponge products
