The (New) CIEH Level 2 Award in Food Safety in Catering is designed to give candidates an understanding of the terminology used in food safety and enable them to define the terms of food safety, food poisoning, food-borne illnesses, contamination, hazard and HACCP; state the consequences of poor standards of food hygiene and the benefits of good standards; understand the use of a documented food safety management system; understand the relationship between hazard and risk and how this can help prioritise action; describe the symptoms of food poisoning; and give examples of those people most at risk.
