Culinary Skills, City and Guilds

VRQ Level 2

The Culinary Skills qualifications will develop you to become a chef or progress to a more senior chef's role. You'll gain a high standard of cookery skills and patisserie skills. You will also learn other workplace essentials like in food safety and working with others. The Culinary Skills qualification is for anyone who works or wants to work as a chef in the catering and hospitality sector. It is ideal for both 16-18 year olds and 19+ learners who wish to seek a career in this industry.

Students aged 16-18 will form a study programme which will also include the VRQ Level 2 Certificate in Professional Food and Beverage Service qualification (this is available for mature students to study at an extra cost).

Depending on GCSE results the study programme could include either functional skills (maths & English) or GCSE (maths & English) and any underpinning knowledge required for the qualification.

In this course, students cover the fundamental professional culinary skills required to become a chef in the current, dynamic industry.

The course covers topics such as:

L2 Food safety in catering

Prepare and cook stocks, soups and sauces

Prepare and cook fruit and vegetables

Prepare and cook meat and offal

Prepare and cook poultry

Prepare and cook fish and shellfish

Prepare and cook rice, pasta, grains and egg dishes

Produce hot and cold desserts and puddings

Produce paste products

Produce biscuit, cake and sponge products

Produce fermented dough products

There will be a requirement to purchase uniform and knives which will be further explained at interview.

  • Help to achieve GCSE English and maths at grades A*-C if you do not already have them
  • Practical activities that help your personal development including study skills, enrichment activities, employability training and classes in personal and social skills to get you ready for further education or employment.
  • Support to enable you to progress to the next level of study or employment

English and Maths

English and Maths skills are vital for employment and to secure a place on courses at a higher level, including university.

We have a team of tutors who will work with you to achieve these essential qualifications and enable you to apply these skills in your day to day activities and work.

Since September 2013 any young person who does not achieve their GCSE in English language and mathematics at grade C or above will have to continue their studies at college. Students who have a grade D in either subject must study these subjects at GCSE level.

Some of the best food I've had and at an incredible price. 3 courses and half a bottle of (good quality, not house) wine for £27.50 per head. These trainee chefs really know what their doing. The college does a fantastic job in training up chefs who go onto to work in some of the best restaurants in the region country. The front of house staff are let loose early in their training which provides an endearing (occasionally entertaining!) waiter/waitress experience
