Technical Certificate

This Level 2 Technical Certificate in Professional Cookery is for you if you are 16 or over and would like to work in the hospitality and catering sector as a chef. This qualification provides you with a real opportunity for you to gain work specific skills and knowledge in Professional Cookery as well as studying specific English and Maths that would benefit you in your studies and into employment. It will provide an opportunity to connect your technical learning with real-life work placements through the work experience element of your course. There will be other non-qualification activities which you will engage in whilst studying such as enrichment activities which might include the development of employability skills, team work, safe working practices and problem solving techniques, which are really important when thinking about working in this industry. You will also receive personal tutorials which will provide opportunities to set meaningful targets for yourself and to carry out self-evaluation and reflection.

Students aged 16-18 will form a study programme which will also include the VRQ Level 2 Certificate in Professional Food and Beverage Service qualification (this is available for mature students to study at an extra cost).

Depending on GCSE results the study programme could include either functional skills (Maths and English) or GCSE (Maths and English) and any underpinning knowledge required for the qualification.

In this course, students cover the fundamental professional culinary skills required to become a chef in the current, dynamic industry.

Learners interested in the Level 2 Technical Certificate in Professional Cookery will study theoretical aspects of the subject and apply them to practical tasks.

Techniques covered include:

- boiling, poaching and steaming

- stewing and braising

- baking, roasting and grilling

- deep frying and shallow frying

- cold food preparation

Learners will also cover:

- the structure of professional kitchens and the principles of working as a professional chef

- how knives, tools and equipment are used in professional kitchens

- how to work safely and hygienically

We have a team of tutors who will work with you to achieve these essential qualifications and enable you to apply these skills in your day to day activities and work.

Since September 2013 any young person who does not achieve their GCSE in English language and mathematics at grade C or above will have to continue their studies at college. Students who have a grade D in either subject must study these subjects at GCSE level.

Some of the best food I've had and at an incredible price. 3 courses and half a bottle of (good quality, not house) wine for £27.50 per head. These trainee chefs really know what their doing. The college does a fantastic job in training up chefs who go onto to work in some of the best restaurants in the region country. The front of house staff are let loose early in their training which provides an endearing (occasionally entertaining!) waiter/waitress experience
