Course information

This qualification is designed for students aged 16 and over who are working towards becoming a chef in a professional kitchen. You are likely to have previous experience and/or a relevant level 3 qualification in cookery, such as the City & Guilds Level 3 Advanced Technical Diploma in Professional Cookery or have completed the Level 2 Diploma in Professional Cookery which this qualification will build on. This qualification is designed to help you enter employment with a higher level of responsibility or at a more prestigious establishment.
This course will help you develop advanced skills and techniques to produce a range of dishes and patisserie products, enabling you to undertake a wide range of roles within a professional kitchen. The topics that will be undertaken will enable you to develop advanced skills and techniques in producing:
- meat dishes
- poultry and game dishes
- fish and shellfish dishes
- vegetable and vegetarian dishes
- pastry products
- hot, cold and frozen desserts
- cakes and sponges
To support the development of these skills, you will also undertake the following topics:
- food safety supervision
- gastronomy
The College will work with local employers who will contribute to the knowledge and delivery of training. Employers will provide demonstrations and talks on the industry and where possible work placements will also be provided by the employers.
There is a requirement to purchase uniform and knives which will be further explained at interview.

You could progress into employment or onto the following course:

HNC in Hospitality Management

You could enter employment as a first commis chef or a chef de partie at high end establishments, such as:

- fine dining restaurants
- Michelin Star/Rosette restaurants
- gastro pubs
- luxury hotels

Entry Requirements

Minimum entry requirements are GCSE grades F-G or above in English and Maths, or achievement of Entry 3 in the College online initial assessment tests in English and Maths. It is desirable to have a reasonable level of ICT. This course is suitable for 16-18 students and mature learners. You will also be subject to interview. At interview we expect you to be enthusiastic and passionate about food. Please bring any GCSE results or predicted grades, plus any other qualifications you might have gained.
