What to expect from the course

This qualification is designed for students aged 16 and over who want to work as a chef in the pastry section of a professional kitchen or a follow on course from the Level 2 Patisserie.

You are likely to have previous experience and/or a relevant level 3 qualification in cookery, such as the City & Guilds Level 3 Advanced Diploma in Professional Cookery or have completed the Level 2 Diploma in Culinary Skills or Patisserie on which this qualification will build. This qualification is designed to help you enter employment with a higher level of responsibility or at a more prestigious establishment.

The College works with local employers who contribute to the course content and delivery of training. Employers will provide demonstrations and talks on the industry.

You will also gain work experience with a college approved employer, as well as working in our own realistic working environment, the award-winning Academy restaurant, where you will be producing your masterpiece desserts.

This course will help you develop advanced skills and techniques to produce patisserie products, for example fine desserts and pastries.

The topics that will be undertaken develop advanced skills and techniques in producing:

- dough and batter products
- petit fours
- pastry products
- hot, cold and frozen desserts
- cakes and sponges
- display pieces and decorative items

To support the development of these skills, you will also undertake the following topics:

- food safety supervision
- supervision in the professional kitchen
- sustainability
- gastronomy

Academy Bakery

The Academy Bakery is located on the Duke Street campus, producing a range of first class baked goods daily. These include artisan breads, patisserie and biscuits, as well as special occasion/novelty cakes by award-winning master-bakers. Students are offered a range of discounts throughout the year.

Academy Hair and Beauty Salons

Duke Street is also home to The Academy Hair and Beauty salons. They offer generous student discounts on a wide range of hair and beauty treatments, at a fraction of high-street prices. These include styling, cutting, perming, highlights, facials, manicures, electrolysis and traditional and homeopathic massage.

Academy Restaurant

Duke Street campus is also home to the College’s Academy Restaurant. Often referred to by it’s customers as Liverpool’s hidden gem, the restaurant serves top class cuisine, at highly competitive prices. Food is expertly prepared by professional chef/tutors and young chefs in training and offers students a range of discounts at different times of the year.

When you become a student of the College you’ll receive full access to Microsoft Office 365. This allows you to install the software on your own computer and other devices at home, completely free of charge.

Onsite Sports Facilities/Fitness Suite

The college has excellent sports and fitness facilities at its Roscoe Street campus. Students pay a one-off membership fee for all year round usage of weekly supervised gym sessions, as well as access to a number of sporting clubs and events.

Entry Requirements

The following is a guide as to what you might be expected to achieve to gain entry onto the course.

A minimum of 5 GCSEs grade 4 (previously C) or above including Maths and English Language OR a minimum of 5 GCSEs grade 4 or above including Maths and English Language and relevant subject qualification OR a minimum of Level 2 course in your chosen subject at merit or above and English Language and Maths at Level 2.

An enthusiasm and passion to succeed and develop yourself with great attendance will be vital to you achieving success on this course.

Fees

If you are 16-18 years old at the start of your course, studying at The City of Liverpool College is free. If you are aged between 19 or over and don’t have 2 A-Levels (or equivalent), you won't have to pay any fees for this course.

19 years old or over and have 2 A-Levels (or equivalent) at the start of the course? Fees are payable, but you may qualify for an Advanced Learner Loan to cover the cost of your course. In future years this fee may be subject to change.

Please note this is a two year programme that consists of two courses. Your fee status may change from one year to the next depending on age and circumstance at the start of the next course e.g. if you turn 19 before progressing to the next level, you may be required to pay fees as outlined above.
